For the crust:
1c almond meal
1/4 stick of butter melted
Small drizzle of light agave
Preheat oven to 350. Spray large loaf pan or pie plate. Mix all ingredients in a bowl, then press into large bread loaf pan or pie plate and bake 10-12min, until golden brown. Set aside and let cool completely.
Topping and Filling Ingredients:
1 small container of whipping cream
1 brick of lowfat cream cheese – room temperature
2-3 TBLSP (depending on flavor desired) of Black Raspberry All-Fruit
1/8c coconut sugar (can add more depending on taste)
Whip the whipping cream until almost full whipped consistency, then add the coconut sugar. Then continue to whip until it looks like whipped cream. Do not over whip. Set aside.
Blend the cream cheese and All Fruit, then slowly add half of the whipped cream. Pour onto the crust and smooth, then add the remaining whipped topping to the top. Refrigerate at least 2 hours or over night. Enjoy!
