These delicious treats are dairy-free and egg-free and taste shockingly like your favorite candy bar. You can sub in almond butter for a peanut-free option, or WOWButter for a nut-free option.
12 large dates
3-4 tablespoons peanut butter (or sub WOWButter or almond butter)
12 oz dark chocolate
Toasted coconut chips (optional)
If your dates aren’t pitted: carefully slit open the date longways. Remove and discard the seed.
Fill each with a small amount of peanut butter. Place in freezer for ten to fifteen minutes to allow them to firm up.
While they’re in the freezer, melt the dark chocolate in a double boiler or very gently in the microwave (one minute at a time, on half-power max). Coat each date in chocolate; top with a piece of coconut. Place back in freezer ’til the chocolate is firm.
Store in a tightly covered container or keep frozen until you’re ready to eat them!
